Sunday's sudden project that snowballed

My plans for the day were to maybe do a little yardwork, scan an old magazine... basically nothing important beside cleaning the gutters for better rain/snow drainage while it's dryish out.

My cat Cheddar Meatloaf has not been consistant about using the litterbox for his urinary needs, I could tell by the smell of the familyroom, so I went looking for the source of the whiz smell. (Please don't say "maybe he's getting old" -- he's 12, yes, but he's been using a particular corner of the familyroom on a random basis since he was 4. Blame previous homeowners who had a pet who also used that corner.) I’ve taken many measures to make that corner and the bookcase in it inhospitable, or at the least get the stuff off the bottom shelf so he doesn’t ruin them (I lost an old dictionary once because of that). Yeah, there’s new wee stains. I pull out the bookshelf and hope IKEA has replacement pieces because the wood and veneer are warped. (Likely will just replace the bookshelf entirely… eventually.)

So I figure I can cut out the carpet. The stains go down to the plywood panel subfloor, and happily my familyroom is a former garage so I know there’s concrete underneath I think so cutting out the wood is an option. But the stains keep going, and some are wet. I move the small freezer that's in the middle of the wall past where I've been investigating, and discover the freezer has been leaking or dropping condensation underneath so now I have cat piss AND mold, and have to cut out far more of the wood and carpet than intended… I have planned to take everything out of the room and take up the carpet sometime to lay a new floating floor, but not at this moment! MUST STOP WORKING ON THIS!

So I’ve sprinkled baking soda on the wood to do something about the smell and make it less interesting for the cat (I’ve already caught him rolling on the wood once!) and will get back to this when I’m better prepared… and I’m not giving up my road trip next Saturday to the Central Washington State Fair for this! The freezer has been emptied and put on the back porch, leading to the wild hare in the rear thought "hey, how about buying a new freezer?" Had to put my frozen food somewhere, you know. And thus I bought a 5 cu.ft. replacement on sale which for now sits in the diningroom blocking the sliding glass door, along with a Dremel Multi-Max (the $99 version of the $400 Fein MasterBater Multimaster seen in infomercials) so I can cut the floor out. The box for my new GE deepfreeze unfolded into the perfect size to cover the bare damp fetid wood.

I’m not sure why it took me so long to catch onto the slow-cooker phenomenon. Now that I have one I know it’s a busy girl’s lifesaver!

My husband and I both work and when we get home at night we want to spend time with our son. But we still need to eat dinner and we want it to be healthy. My new slow cooker is solving all these problems for me (and more!).

Here’s how it works for me:

* Before I leave for work in the morning I load up the slow cooker with the ingredients in the recipe. (Confession: I look for recipes that require little to no work, like minimal chopping and browning.)
* When I get home at night, dinner is ready. That’s it. Really!
* OK, one more thing—it’s saving us money too. Because I’m so psyched to cook in my slow cooker I’m planning meals ahead, so I’m not buying extra ingredients at the grocery store and I’m using cheaper cuts of meat. Plus the recipes make multiple servings so we have more than one night’s worth of food for dinners, plus extra for lunches or leftovers to freeze for another time.

Seriously genius, right? Here are some of my favorite ultra-easy healthy slow cooker recipes:

Slow-Cooker Braised Pork with Salsa: This recipe is so easy I almost felt guilty claiming I’d made dinner. You don’t even need to brown the meat and much of the flavor comes from prepared salsa. The result is a full-flavored, meltingly tender pork stew. Serve it over quinoa or rice.

Squash, Chickpea & Red Lentil Stew: This richly flavored vegetarian stew brings together ingredients I always have on hand and that even my son likes (so I don’t have to spend extra time making baby food!). We also like to serve this over brown rice or steamed spinach.

Hungarian Beef Goulash: Again, very little prep for this streamlined goulash, which skips the step of browning the beef, and instead coats it in a spice crust to give it a rich mahogany hue. This saucy dish is a natural served over whole-wheat egg noodles. Or, for something different, try prepared potato gnocchi or spaetzle.

Barbecue Pulled Chicken: My husband and I both loved this re-interpretation of pulled pork. It was very saucy and made a great dinner either on rolls as sandwiches or over rice. To make ahead: Cover and refrigerate for up to 3 days or freeze for up to 1 month.

1 8-ounce can reduced-sodium tomato sauce
1 4-ounce can chopped green chiles, drained
3 tablespoons cider vinegar
2 tablespoons honey
1 tablespoon sweet or smoked paprika
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
2 teaspoons dry mustard
1 teaspoon ground chipotle chile
1/2 teaspoon salt
2 1/2 pounds boneless, skinless chicken thighs, trimmed of fat
1 small onion, finely chopped
1 clove garlic, minced

1. Stir tomato sauce, chiles, vinegar, honey, paprika, tomato paste, Worcestershire sauce, mustard, ground chipotle and salt in a 6-quart slow cooker until smooth. Add chicken, onion and garlic; stir to combine.
2. Put the lid on and cook on low until the chicken can be pulled apart, about 5 hours.
3. Transfer the chicken to a cutting board and shred with a fork. Return the chicken to the sauce, stir well and serve.
Makes 8 servings.
Per serving: 184 calories; 8 g fat (2 g sat, 3 g mono); 68 mg cholesterol; 8 g carbohydrate; 20 g protein; 1 g fiber; 236 mg sodium?; 303 mg potassium.

Grassfed rare eye of round for sammiches this week. Coulda used better lighting, but it's all nicely put away in the fridge and I'm not getting it out again!

Oh yes, and it got The Boo Buzz of Approval. Funny how a litlte predator can enjoy eating a critter a hundred times bigger than she is.

1 boneless eye of round roast (3 1/2 to 4 1/2 pounds)
4 teaspoons kosher salt or 2 teaspoons table salt
2 teaspoons vegetable oil plus 1 tablespoon
2 teaspoons ground black pepper

1. Sprinkle all sides of roast evenly with salt. Wrap with plastic wrap and refrigerate 18 to 24 hours.

2. Adjust oven rack to middle position and heat oven to 225 degrees. Pat roast dry with paper towels; rub with 2 teaspoons oil and sprinkle all sides evenly with pepper. Heat remaining tablespoon oil in 12-inch skillet over medium-high heat until starting to smoke. Sear roast until browned on all sides, 3 to 4 minutes per side. Transfer roast to wire rack set in rimmed baking sheet. Roast until meat-probe thermometer or instant-read thermometer inserted into center of roast registers 115 degrees for medium-rare, 1 1/4 to 1 3/4 hours, or 125 degrees for medium, 1 3/4 to 2 1/4 hours.

3. Turn oven off; leave roast in oven, without opening door, until meat-probe thermometer or instant-read thermometer inserted into center of roast registers 130 degrees for medium-rare or 140 degrees for medium, 30 to 50 minutes longer. Transfer roast to carving board and let rest 15 minutes. Slice meat crosswise as thinly as possible and serve.

some places we will never be able to revisit again. unfortunately i was too young at the time to get a better snap of the place when there used to be booths in this restaurant and a wooden refrigerator that existed a bit to the left. i probably have some snaps from that period but nothing close to what i would have want to achieve. some good memories here in the past with family luncheons. freshly restaurant made dessert apple pie or warm custard pie after a great ox tail stew or rib roast lunch. great tasty portions!! the aroma from the restaurant can be smelled through the alley way beside.

an interesting note~ this used to be the meeting place for the agency models when i had worked with the agencies here in sf (ten of them at my peak). i had tons of model meet me here for coffee because it was close to a few downtown agencies and my printing darkroom was across the street. some very good memories!

1/2 cup sesame seed
1/4 cup LAND O LAKES® Butter, softened
1/2 cup soy sauce, room temperature
2 teaspoons freshly grated gingerroot
1 can (11 oz) Pillsbury® refrigerated original breadsticks (12 breadsticks)
2 1/2 cups cubed cooked chicken
2 1/2 cups broccoli slaw or shredded broccoli
1 cup chopped cucumber
3/4 cup julienne carrots (from 10-oz bag)
1/2 cup chopped fresh cilantro
1/4 cup finely chopped red onion
1/4 cup Fisher® Cashews, Halves and Pieces, coarsely chopped
1/2 cup Crisco® Pure Olive Oil
1/3 cup cider vinegar
1/2 to 1 teaspoon sesame oil
3 tablespoons sugar

1. In 10-inch skillet, cook sesame seed over medium-high heat 3 to 5 minutes, stirring constantly, until lightly toasted. Remove from skillet to plate to cool.
2. Heat oven to 375°F. In small bowl, beat butter, 1 tablespoon of the soy sauce, 1 teaspoon of the gingerroot and 2 tablespoons of the sesame seed with electric mixer on low speed until blended. Carefully unroll dough into 2 rectangles. On each of 2 ungreased cookie sheets with sides, place 1 rectangle; press into 8x6-inch rectangle. Spread with butter mixture. Using pizza cutter, cut each rectangle lengthwise into 6 breadsticks, then cut each breadstick crosswise into 8 pieces.
3. Bake 8 to 12 minutes, rotating cookie sheets halfway through baking, until crisp. Remove from cookie sheet to cooling rack; cool.
4. Meanwhile, in large bowl, toss chicken, broccoli slaw, cucumber, carrots, cilantro, onion and cashews. In container with tight-fitting lid, shake olive oil, vinegar, sesame oil, sugar and remaining soy sauce, gingerroot and sesame seed until well blended. Just before serving, pour dressing over chicken mixture; toss to coat. Add croutons; stir lightly.

1/3 cup sweetened dried cranberries
1/2 cup Hershey’s® mini chips semi-sweet chocolate
1/2 cup Reese's® peanut butter chips

1. Let cookie dough stand at room temperature 10 minutes to soften.
2. Meanwhile, heat oven to 325°F. Line 2 large cookie sheets with sides with nonstick foil or cooking parchment paper. In large bowl, mix cookie dough and cinnamon. Add oats, almonds, pecans, coconut, raisins and cranberries; knead into dough until well blended. Crumble mixture evenly on cookie sheets.
3. Bake both cookie sheets at the same time 17 to 22 minutes, stirring every 5 minutes and rotating cookie sheets halfway through baking, until light golden brown. Cool completely on cookie sheets, about 30 minutes.
4. Break granola into smaller pieces if necessary. In large bowl, mix granola, chocolate chips and peanut butter chips. Store in large resealable food-storage plastic bag, or store in 1/2-cup amounts in small food-storage bags for ready-to-go snacks. Store up to 3 days.
